Where else can one order a Lawless—a Bourbon cocktail in a vanilla-pipe-tobacco-smoked glass, named after a local denim company—and quality barbeque Burnt End Sliders in the heart of downtown Phoenix? Blue Hound Kitchen & Cocktails at Hotel Palomar in CityScape is a contemporary, American gastro-lounge, offering traditional, hearty comfort foods with a cocktail menu created by a true mastermind mixologist.

An establishment of Kimpton’s Hotel Palomar, Blue Hound opened its doors to the city just up the steps off of South Central Avenue and East Jefferson Street in June 2012. In short walking distance from the downtown sporting events, concerts, nightlife, businesses and ASU Downtown, Blue Hound attracts a myriad of patrons for its lunch, dinner and weekend brunch.

Chef Stephen Jones stirs up some fire in the kitchen with glorified classics while incorporating Kimpton’s EarthCare initiatives by offering all-organic menu specials, using nly BSE-free Angus beef and following Monterey Bay Aquarium Seafood Watch standards.

Guests have a variety of hearty favorites to choose from including Mom’s Meatloaf topped with crispy shallot and a sweet potato salad, the popular Kentucky Fried Chicken Sandwich and Cod Fish Po’ Boy. A must for true barbeque lovers is a pick-one or pick-two Smoke Box, offering up melt-in-your-mouth Burnt End Sliders, Spicy Lamb Hotlinks, Brisket Sandwich, Todd’s Baby Backs and Pulled Pork Sandwich.

While dishes are prepared, Hotel Palomar’s Head Bartender and Mixologist Stephanie Teslar has a passion and wealth of knowledge for wine and spirits. With a wine menu comprising organic and biodynamic wine selections, even a few come from local Arizona vineyards—Dos Cabezas and Arizona Stronghold.

Teslar takes well-rewarded risks with the cocktail menu, including an innovative “Whiskey Times” menu, where Arizona Distilling Company’s Copper City Bourbon is incorporated into a smooth Artist’s Special, shaken with sherry, grenadine and lemon. No matter a guest’s taste, Teslar takes a spin on the originals, able to surprise with a new and delicious drink taking them outside their boundaries. Her knowledge of spirits reaches as far as the agave fields—literally—where she once spent time working.

Blue Hound, representing ‘loyalty,’ not only supports local and incorporates organic, BSE-free beef and sustainable seafood. The EarthCare initiatives include serving organic coffee, printing menus on post-consumer recycled content paper and maximizing compost and recycling with excess cooking oils and grease used for bio-diesel fuels.
